Banana Bread--the really awesome kind :)

I was looking for a recipe that I could sub some "healthier" ingredients in for banana bread that would still taste moist and yummy and I think I found one. I made it today and it was quick, easy and very yummy!

Ingredients
1 cup sugar
2 eggs
1/2 cup margarine or butter (you can sub applesauce for this if you want--I didn't have any today, but I would try that next time)
1 1/2 t. vanilla
1/2 cup plain yogurt
3/4 cup white flour
3/4 cup whole wheat flour
1 t. baking soda
1/2 t. salt
1 cup mashed ripe bananas (about 2-3)
1/2 cup chocolate chips (optional) and/or your favorite kind of nut

Directions
Grease one a loaf pan, or use 3 mini loaf pans or use cupcake tins (I love making muffins instead of the banana loaves). This should make about 24 muffins. Cream margarine, sugar, eggs and vanilla. Add the dry ingredients and then mash up the banans, nuts, and yogurt and mix well. Add chocolate chips (if you're using them--I sometimes do, I sometimes don't) and then bake at 350 degrees for 1 hour. If you are making a smaller loaf--bake it for less time. My muffins today went for about 20-25 minutes.

This is a really awesome banana bread recipe and it's the favorite one I've made so far. I think the yogurt adds a great consistency and makes it really moist. I want to try to make it with applesauce instead of margarine. Yummers :)
