Shepherd's Pie ala Amy

I never knew what Shepherd's Pie was until I went to college and was cooking in the FLSR. I needed an easy, yummy, recipe to feed 20+ starving Germans and so I called my mom and she recommended I make Shepherd's Pie. And so I did. It was yummy, but my recipe for it has changed over the past few years as I've modified and changed what I've made. So...here is my recipe that I really LOVE. It has the perfect tomato/meatyness too it (not too much tomato, not too much meatyness, but a great combo). And I do know that some people don't put tomato in theirs when they make it, but ahh...it's so yummy...so I do :)

Ingredients
1 lb ground beef or ground turkey (lean)
1 small onion
2-3 T olive oil or butter
1 14 oz can crushed tomatoes
1 8 oz can tomato sauce
2-3 T Worcestershire sauce
2-3 squirts ketchup
salt to taste

2 cans green beans (or package of frozen)--I use green beans instead of peas cause I like them a WHOLE LOT better, but you could use any veggies that you have on hand.
A bunch of carrots cooked
Mashed Potatoes (I used 6 russet potatoes for a 9 X 13 pan, boiled them and then mashed them--added some butter, sour cream and salt and they are CREAMY and yummy)
Cheddar Cheese

Directions
Chop up the onion and saute in pan with butter. Add the ground beef and brown. Drain and then add the crushed tomatoes and tomato sauce. Add enough worcestershire to give flavor (I kept tasting and eyeballing) and a few squirts of ketchup. Then add the green beans. Mix together and layer in the bottom of a 9 X 13 baking pan. You could also do this in a pie plate, but I would probably half the recipe. Then add the cooked carrots on top (and any other veggies you want to add). Add the mashed potatoes on top of it and spread it out--like a cake :) Sprinkle with cheddar cheese and bake at 375 for about 30 minutes or until the cheese is melted and it's warmed throughout.

This is the epitome of yummy, warm, winter, comfort food and it's great because you can really use what you have on hand. And let me tell you, I ALWAYS have crushed tomatoes on hand. I LOVE them. They are so good in pizza sauce and in almost any tomatoey recipe :) So...go make yourself some yummy shepherd's pie. It's yum, yum, yummy!
