Classic Pancakes (from America's Test Kitchen)

We've been eating these beauties for the past few weekends in a row and can't get enough of them! They really are that good. This is definitely our favorite (non-time-intensive) pancake recipe. Perfect to whip up for a quick breakfast or a quick dinner :)

Ingredients:
2 cups all-purpose flour
2 T sugar
2 t baking powder
1/2 t baking soda
1/2 t salt
2 cups buttermilk (2 cups milk, 2 T lemon juice--let sit for 10 minutes)
3 T unsalted butter, melted and cooled
1 large egg


Directions:
I have never used "real" buttermilk in these and they turn out fabulous every time. I always start by making my "buttermilk" mixture so that it can have the time to sit. Then put the flour, sugar, baking powder, baking soda and salt in a bowl and whisk together. Melt the butter and pour into the buttermilk mixture. Whisk the egg into the buttermilk mixture and then pour all the liquids together and whisk together. Pour into a pan and flip when you see bubbles covering the pancake. Enjoy!
