Quick Breakfast (or lunch or dinner...)

So, this recipe is not from my family and it's not my take on something (meaning I throw together a little of this and a little of that). I actually found it through my former roommate's website. As roommates we only shared one spring term together, but it must have done some good because we both ended up marrying spouses who were also roommates. Like, immediate roommates, not just "roommates." Haha... i sure do get a kick out of the whole "immediate" roommate thing. Anyway, we used to say, "My boyfriend's roommate or my roommate's boyfriend" and it meant the same person, weird I know but so true. Anyway, I got this great recipe from her--props to Becca Rowley for this amazing recipe...it has provided many a Saturday breakfast for us and we love it. Just as a side-note, I actually scaled this recipe down by half, because there's only 2 of us eating, so if you want to make more, double it (that's the way the original recipe was written.

Ingredients
2 1/2 T. Butter
1/2 cup Milk
1/2 cup Flour
1/4 tsp. Salt
3 eggs

Directions
Preheat the oven to 450 degrees. Put the butter into a pan (I use a round one, but you could use a small baking dish or even a cookie sheet--but you might want to double the recipe if you're going to do that). Let the butter melt in the oven while you finish combining the other ingredients. Whisk the eggs and milk together. Add the flour and salt to the mixture and mix together. Then add to the melted butter in the pan. Let it cook for about 15-20 minutes until it has risen and forms "mountains." Take it out of the oven and serve with your favorite topping. My favorite is powdered sugar, but I also like jams and fruit sauces with it. Jeremy likes syrup, but then again, he likes syrup on all of our breakfast items, so you don't have to take his word for it.
